Are (some) transactions automatically assigned to categories?

Hi, I configured most of my Payees and their default categories. However,
some transactions seem to be automatically assigned to categories although
I didn't set a category. I notice this often with generic Payees like
"PayPal" after importing from aqbanking (hbci). Mostly the category is
wrong and I sometimes miss this or only notice too late.

Is there any default matching going on and can I disable it?
