I tried that, but it does not work. The problem is you can't turn it off 
afterward in a sensible way.

Consider:
- user chooses an alternate sheet => boolean on
- then reverts to the initial, document-chosen sheet
 => how would you know if he wants this latter sheet sticky, or if he wants to 
revert to document-chosen mode?

I wasn't sure about that either, but after trying it for a while, I find it 
very clear: the similarity with the "set encoding" menu that is just above 
makes it glaringly obvious, IMO.

Especially, when you look into "set encoding" > "Automatic Detection",
the first choice is "Semi-Automatic", with other choices flowing below. So 
it's exactly the same setup and they mutually benefit of that logic
