There are various ways in which you can configure this. 
- Mail is only send to the person causing the build to fail (you may need 
'Email-ext plugin' for that, not sure)
- Sending the mails from a specific account, so ppl can set up filters based on 
sender (so you can put all failed builds mail in your preferred folder for 
example)
- Mail notifications uses a template -> enough fields to create filters on (ie: 
rather consistant subject field)

- Failed builds are supposed to 'annoy' so they'll get fixed asap
