Actually you can do the following without any plugins:

IMAP/SMTP (Outlook 2000+2002 even supports caching of IMAP 
messages)

LDAP Address book (Outlook 2000+)
 - this allows you to start typing a name in the message To: field and
 press Ctrl+K for address completion.

Free/Busy times
 - With Outlook 2000 through ftp and http
 - Outlook 2002/XP through Webdav

The major feature that you cant get and that you need the plugin for
is folder sharing  (A manager giving access of his calendar to his secretary)
Also, Outlook does not allow you to store your calendar items in IMAP
without the plugins.
