They do work, it is just that the shortcuts have to be typed out manually at the moment.  eg. "Ctrl+Alt+L" rather than pressing those keys.

Pressing "Ctrl+Shift+N" will always launch the default profile but you can assign an additional shortcut to whichever profile happens to be the default.  I could add a note to the dialog that the default profile is the one which is opened when triggering the "New Tab" or "New Window" actions.
