There is nothing really helpful at the moment, I'm afraid.
I only recently started to rewrite and update the KMail-Handbook that should 
be accessible on [1] by the time I have something to present that's consistent 
again.
Recently KDE-Userbase was introduced where also KMail is represented with a 
page under [2]. There too is not really much to be seen there yet.

In short, KMail doc is a very poor thing at the moment.
I'll improve that as quickly as my family allows ;-)

The folder 'Searches' is 'only' a view. You can remove the folder as such by 
right clicking on it. But if you delete a message inside a search folder then 
you delete the mail itself and not only it's representation in that search 
folder.
