I can still reproduce it with caldav / carddav from Baikal (since Nextcloud is
still completely broken for me with KDEPIM 6) on every fresh install. However:
once I do exactly the following:

- manually set a colour in korganizer
- disable the calendar in the (also still broken) setting GUI of the digital
clock and edit [PIMEventsPlugin] in .config/plasmashellrc manually

the bug is gone and I can enjoy my correctly configured calendars in plasma. 

Ugly, hacky, workaroundy, but at least usable.
