When using Menu Editor deleted items are not removed and setting default Window Manager

I am using Fedora Core 2 and KDE. I have two questions that google
cannot seem to answer for me.

1. I am trying to customize my menu with Menu Editor and when I make
changes they never appear. Not after a login/logout and not after a
FULL reboot. What files is it editing? Any help?

2. My default window manager is Gnome. How can I change this?
