Qt5 (stable), KF5 from git (see below), PIM frameworks from git (projects.kde.org/projects/pim I think) and the standard PIM repos, all from master. If you use Kolab, you also need some special KF5 branch of libkolab.

No, you need all of PIM on Qt5.

You don't need Plasma to use KF5 PIM. However currently you need development version of Frameworks to build PIM, so packages won't help you much :( Sometimes it compiles with older frameworks, but you need to manually change required versions in CMakeLists.txt... I think right now Laurent bumps the deps when new Frameworks are released, maybe we could only bump it when we really need it...
