You really should use the spec - [MS-OXCPROPS].pdf, and the documents that are
outreferenced from that. Let me know if you have problems.

You need to resolve them. There is API for that.

We have a exchange2ical library in openchange. I'm pretty sure Jelmer packaged
that too.

We should have OK API for that too. I think I did that for my old address book
lookup, since thats where the users' photos are :-)
