1.ps premared with cups' default Monospace font, 2.ps - with Courier
Indeed, both doesn't contain a Greek characters

Your version of Courier isn't support full Unicode, only euro characters nor Cyrillic.

ghostscript (and cups's filter too) use fontpaths from /etc/X11/xorg.conf, please place 
some ttf sets (such as webfonts, dejavu-ttf, bitstream-vera) at first places in paths.
