To quickly respond to some of the points in the very long thread:
- Bugzilla's UI is completely customisable using templates. If the
search form is too complex, you can remove bits - or have simple and
advanced versions.

for a demonstration. The classic version is from before a usability rewrite.
- It's possible to have anonymous bug submission with a tiny bit of
hacking, if you want it. But forcing logins does improve report quality.
- Fenris (the Loki Bugzilla fork) is no longer maintained or supported.
The team maintaining Loki's code recommend Bugzilla.
