Well, your fields (item number, order number, ...) don't have much to do with 
*photo* management, *and* even if you could define the extra fields you need, 
other programs would be unable to use them. So you'd be stuck with the initial 
program you use. And, keywords are not only used on social media, have a look 
at the fields defined by IPTC...

Image metadata tags have to be read by different programs to be really useful: 
photographer uses one program to add some of the tags, employer/client can add 
others, or use a different program to read them. That's why those tags (in the 
XML sense) are governed by several standards (EXIF, IPTC, XML namespaces).

With XML, it should be possible (in theory) to add the fields you need, but 
there won't be (m)any programs that can use those fields: the XML files will 
be read, but any fields the reading program doesn't understand are skipped.
