Either you have a file named /etc/apt/preferences with all the pin 
ordering, or you have (like in my case) separate files for each repo 
inside /etc/apt/preferences.d

For example, my philip5-extra-ppa.pref contains:

Package: *
Pin: release o=LP-PPA-philip5-extra
Pin-Priority: 700

Higher number of Pin-Priority gives extra priority over packages from 
other repositories. But seems there are other subtilities too.
