If all you do is select an image, uncheck a checked tag in the right
side bar "Captions/Tags" panel, and then click Apply, writing to the
sidecar and writing to the image behave exactly the same. The
unchecked tag is removed from the sidecar and removed from the image
metadata. I set up two test databases, one for writing to the sidecar
and one for writing to the image file. Both behave exactly the same.

Sorry to be so obtuse, but:

What does "uncheck a checked tag in the right side bar metadata panel"
mean? As far as I can tell, the panel labelled "metadata" is
read-only.

What does "Let's keep out of the current discussion the case of
editing the tag tree while a picture with this tag is currently
selected for the captions/tags sidebar" mean? The only way I know of
to assign or unassign a tag to an image is to have the captions/tags
right sidebar panel open and then to uncheck the appropriate tag in
the tags list.

What does "editing the tags tree has no effect on any pictures which
carry this tag in their metadata" mean? Do you mean that rearranging
tags on the tag tree doesn't affect tags in the image metadata?
Because if you do it the way I posted to my website (first select all
the tags in the left side tags filter - if somewhere I said select all
the tags in the captions/tags panel, then I miswrote - sorry), yes, it
does affect tags already in the image metadata. But NOT in the xmp
sidecar file. That's the (at least a) difference between writing to
the xmp sidecar file and writing to the image file.
