I am not sure what AqBanking has to do with your CSV import. But to provide an
answer: mostly because they have been developed in parallel at some point in
time.

Because not all edit widgets support a so-called placeholder text (your purpose).
This is displayed in gray when there is no data in the field.

Just out of curiosity guided by the above: are you trying to import your
CSV file through AqBanking?
