With the update of kdelibs4 & kdelibs4-core to version 4.11.2-10.1 this issue
is now fixed. 
The change log shows this:
- Added 0001-Fix-association-with-derived-mimetype-again.patch, fixes
  remaining issues in mimetype handling, see e.g. kde#324502
Which I'm guessing was the cause of the problem.
