One way to do that could be, we could have a prompt for the user asking whether they would like to switch to night mode now, or change to night mode after x minutes, or ask again in y minutes, or don't change.

Yeah, I would like to have an option in Night Color to choose a "night
color scheme" and then it would switch to Breeze Dark once night color
kicks in or something.

But yeah, switching color schemes is pretty slow, heavy, and not very
visually pleasing while it's in process, and might be a stark
interruption when done suddenly.
