if it's a regular C++ plasmoid, put something this in your CMakeLists.txt:

kde4_add_app_icon(<yourproject>_SRCS "<iconfile.png>")

with packaged (non-C++) plasmoids the icon is in the package itself, which is 
rather nicer imho =)
