I have investigated this bug a bit and created this issue in the poppler repo
https://gitlab.freedesktop.org/poppler/poppler/-/work_items/1742.

TL;DR: The document ("Frankreich_5000-DE_Formular_wohnsitzbescheinigung.pdf")
has calculated fields that are not Okular document fields, but only the poppler
internal parents of those fields. These are not exposed to Okular by poppler so
Okular cannot recalculate the document fields.

I haven't checked the second file yet.
