Another reason would be if the signature already made on a PDF is not useful
anymore: perhaps because of the certificate expiring or being revoked without
long-term validity provisions being made, and one wishes to sign it with a new
certificate or, at the very least, discard the old signature to prevent
confusion or trouble. For example, I routinely need to send a standard signed
letter to new people and, to prevent confusion, it's helpful for me to update
the date field and re-sign each time as an affirmation that the special notice
in that letter is still effective. I currently keep a "plain" PDF around and
use a makefile to help add the annotations programmatically and sign from the
command-line, but applying a signature that cannot be removed as easily as it
was added has frustrated me on some occasions.

I don't know off-hand if Poppler makes this easy. Also, "printing to PDF" is a
hack that removes important machine-readable information from the PDF such as
structural elements and isn't a good long-term practice.
