This honestly sounds more like some sort of system driver (filesystem, device,
graphics) lockup or bad hardware. Try look at syslog and dmesg and see if
anything has been logged there while issue is seen.

With the amount of PDF files I open daily when hacking on Okular and Poppler, I
don't think I have seen that ever.
