Hi Giorgio, thanks for reporting this bug.
I could not reproduce it as It seems to work well under Okular Version 0.17.1.
KDE 4.11.1. What I did was to use a 15MB pdf file and insert a Stamp [7], then
right click for the properties options and changed the symbol. All good.
Can you please check if there is a newer version in your Ubuntu install?
