I'm marking this as fixed, Okular from KDE 4.8 will include a new text
layouting algorithm and it will also include a "Copy text from table" mode, so
you'll be able to make sure the text extraction works fine.

If after updating to KDE 4.8 you don't get the behaviour you expected please
reopen the bug.
