Not a bug, you are not embedding the "Symbol" font in the pdf file so it is
querying the system for the "Symbol" font as is giving you one that has a
charset not compatible with the "Symbol" font. You might want to read
http://freedesktop.org/wiki/Software/poppler and define your "Symbol" font to
be a "Symbol"-compatible font
