If I check a checkbox, after a second the page gets refreshed and the checkmark
appears.
Also, if I print to PDF, in the resulting document I see the checkbox actually
checked (even if in a "curious" way -- but that's unrelated).

Which Poppler version do you have?
It works here with both 0.8.7, and with the development version.
