Hello,
You are  using the last Qt5/KF5 version so it won’t have any updates.
1. I don’t see where that string is - can you provide a screenshot?  Regardless, it is unlikely it is possible to remove any text in the menus.
2. Assuming you are using plasma, there are various settings under Appearance System Settings.  If you only want to change Konsole’s you might have to google it as I don’t know off hand.
