The first thing I would suggest is updating to 5.1.3.  There have been changes
in the terminology, so there is no longer a "transfer from" or "transfer to"
label.  The first field is now Payer/Receiver and the second is
Category/Account.  Changing either the Payee/Payer or the category for me does
not change between Payment and Deposit.
