I use Fedora 17, Kontact 4.9.1 and it is exactly the same way you described. 
Full name is unremovable from the column list by being grayed out. I agree 
with you that this should also be optional and not mandatory, but I suspect 
that this may already be the next step for developers in their agenda of 
improving kdepim.
