An update: The problem seems to be tied to the umlaut in my name:

From: Stefan =?ISO-8859-1?Q?D=F6singer?= <stefandoesinger at gmx.at>

Changing my profile name to "Doesinger" results in a working signature. I can
put umlauts in the mail body just fine.
