You can specify the identity that should be used when you reply to messages in
a folder. (Or set it on each account and make sure the Folder is set to
"inherit from parent".) This is in the view with all the accounts and folders,
right-click and properties.
However, there's bug 299270 which means that currently this does not work for
many IMAP accounts.
