It's a little different here with Kmail 1.12.1/KDE 4.3.1:

When I configure kmail (I also use it through kontact) to always show the tray
icon and maximize the kontact window it is correctly restored maximized when I
click on the tray icon. But when I after that action demaximize the window it
isn't restored to normal size but a lot smaller (same width as the not
maximized size I had before but the height is less, seems to be in the aspect
ratio of my display 16:10). When I maximize the kontact window and demaximize
it again  without using the hide and show function of the tray icon the size is
restored well.
