I am not aware of any such document.

So here's how I understand our bugtracker's functions:

Assignment: Since we are such a small group bugs are not assigned to the
one handling the report but to the developer taking care of the actual
bug/feature.

States:
* assigned: you are taking/will take care of the bug/feature. Can also
be used notify another developer about a specific report, for example
when it's about a feature only recently introduced by that developer
(but we don't have really have maintainers for parts of the code)
* feedback: combined with a question because further feedback is
required (well, obvious ;)), if you don't want to look deeper into the
issue don't assign
* acknowledged: for what you described above you'd rather use
"assigned", instead acknowledged just means that that the report is
valid and was recognized but there are no plans yet to work on it
* resolved: obvious
* closed: as Simon already wrote for everything resolved in a version
already released
