Steps to reproduce:

1) Create a text file
2) Enter some text, e.g. "this works"
3) Create another text file
4) Enter some text containing a non-ascii character, e.g. "this works é"
5) View both files in dolphin

The first file will be recognized as plain/text, while the second one will be
recognized as unknown (application/x-kdeuser1 to be precise)
