A way to disable the long-left mouse click shortcut to enter "Edit Mode" / modifying widgets?

That's irrelevant, you're still using it as a touch interface to interact with an application. Now either that goes through support in/by each application, or it goes through the standard HID layers, i.e. your device is going to function as a pointing or a typing device.
