I have (for years) set up my display with only one left and one right panel, because as
you say, I like to use all of my vertical real-estate. I don't use desktop icons, and
keep only my most-often used application icons on the panels.
As for the applications themselves, I always move the toolbars to the left or right sides
unless they have text widgets (and I wish developers would put text widgets into separate
toolbars), again to maximize vertical real-estate.
