The present situation is that you set your defaults in CUPS, via
localhost:631. In the printer dialog you change things as you want them for a
one-off print. There is a slight complication in that if you use a brand of
printer that has its own printer setup - HP is an obvious example, but not the
only one, I think - you need to set your defaults there as well.
