Or, after setting up the two SMTP servers, set up two identities: one for 
'yourself at X' and 'yourself at Y.'  Then on the 'Advanced' tab on the window when 
adding/modifying an identity, tick 'Special Transport' and select X's smtp 
for your X identity and Y's smtp for your Y identity.  Then on the composer 
window, instead of displaying the 'Mail Transport', select 'View->Identity'.

The effect is not much different from Lithion's suggestion (this one only has 
more steps), but if you configure your pop3 to put mail from the different 
servers in different folders, in the folder's properties (right clicking the 
folder) you can set the 'Sender Identity'.  So if you set an X folder's 
sender identity to your X identity, when you click the 'New Message' button* 
while you're in one of your X account's folder the sender identity X will be 
automatically chosen.
