Uh... I checked
It is in the plist file or, if it is not there, the "Normal" variant is used
or, if there isn't one, the first in the list is used.
I thought that "Normal" was "Default".
We should check what does Adium do, if there are themes with "Default" and
"default" variants (I just checked and there are) there is probably a reason.
