I think we will also need a mechanism to update all existing items with a UID 
field, otherwise this is not going to work reliably.

This means we will need some client-side migration code, which would in this 
case try to update the UID using the updated serializers. I think this could 
be solved by versioning the serializers, and running a blocking migration job 
at the same place where the default collections are created.

Or just a custom update procedure (Fetch all contacts, set the uid on each 
using an ItemModifyJob).
