creating your own tags is possible in KMail 1 and in the (not yet released) 
KMail 2.
You can change the tags with Settings->Configure KMail->Appearance->Message 
Tags. Once the message tags are configured, you can set tags to messages in 
the context menu of a message. The combobox next to the quick search fields 
allows filtering for those tags.
