As said, the phone just has a cache (probably using Gears as Ingo  
said) of the Calendar and Mail applications. You'd be wiser to sync  
with them rather than somehow writing a phone and exposing the  
functionality over USB/Bluetooth (which I don't know if it is even  
supported).

You can currently access GMail (slightly buggily) with IMAP and read- 
only Calendar without libgcal or read/write with. You might want to  
use them as a starting point.

In addition, the calendar and mail applications on the phone really  
are rather good.
