The documentation of the KDE applications that are part of the KDE 
application suites can be found at http://docs.kde.org. The 
documentation of KMail you'll find there is a bit outdated.

www.kontact.org is very outdated. For more up-to-date information have a 
look at http://userbase.kde.org. (www.kontact.org will soon be a simple 
redirect to http://userbase.kde.org/Kontact)
