Well, there doesn't exists a documentation about this special case yet.

You can only read into how the kiosk framework works and then apply this
knowledge onto the kdepim config files.

I know a tool like KioskTool, just with predefined settings for the
kdepim config settings would be nice, however it doesn't exists yet.

In KDE 4.X it will become much easier with Akonadi as a central
application which must be configured.
