As long as the project defines anything in CMakeLists.txt (or whatever file
upsteam decides to include) it'll override whatever you pass as CMAKE_ARGS.

Example,
Upstream defines CMAKE_CXX_STANDARD 20 and you set CMAKE_CXX_STANDARD 17 via
CMAKE_ARGS, build will still use CMAKE_CXX_STANDARD 20.
