Hello and thanks for your report,
According to the traduction choices of the KDE French translation team,
Modifier would be the correct action verb here by default.

However, here we are really in the context of a list edition, and not in the
context of "modifying the applications" as the current translation may lead to
think. Thus I agree with you and I've harmonized everything to Éditer (it was
already the chosen translation in other plasma applets).
