K menu problems

Hmm, here Address Book is in Utilities (it has
"Categories=Qt;KDE;Utility" in its desktop file and "appsdir =
$(kde_appsdir)/Utilities" in its Makefile.am)
KOrganizer and Kontact both lack a Categories entry in their desktop
files and both have "kdelnkdir = $(kde_appsdir)/Applications" in their
Makefile.am.
AFAICS there is no PIM category in standard KDE installations. It's
probably a distribution specific extension.
Regarding KMail: An email client is definitely a standard Internet
application. Therefore it belongs to the Internet menu.
