A simple explanation is that developers who work on Falkon only use some
flavor of Linux or BSD and they have no interest or knowledge of other
platforms.
If someone is interested to make and maintain this build for other
platforms I will be happy to help with Falkon specific stuff.
You might be interested in KDE Craft to help with building.

I do not own any Apple device, so I cannot test anything related
specificaly to this platform. It should be possible to build Falkon on
Mac, there is specific but OLD code for this platform still present. But
since it is not being checked periodically there is a high chance that
some fixes are neccessary.
In other words, even if it builds fine, it will be very hard to chase
down any bugs or features required for this platform by developers who
do not posses any Apple hardware.

Falkon can be build from source at least on Linux ARM devices (PineTab,
PinePhone). But I can understand that Apple Arm stuff can be slightly
different.
Also, think of it the other way around. Linux and BSD distributions are
supported because package maintainers from these distributions take the
Falkon source code and build it for their distribution. Apple and
Microsoft are not doing that, they expect the program developers to work
for free to bring a program to their platform.
Best regards,
Juraj
