The captions can be removed from all types of metadata (EXIF, IPTC, ...) apart
from Xmp.tiff.ImageDescription.

However, when a new caption is added, then Xmp.tiff.ImageDescription is
overwritten with the new value (as well as other IPTC, EXIF, XMP appropriate
fields).
