Amarok uses the libgpod library [1] when dealing with iPod support.
Because packaged releases of libgpod tend to be infrequent (the last
release on the sourceforge page was from June 22), most distros
usually package a subversion snapshot of the code in their
repositories.  If you look through the libgpod changelog [2], there
are many entries dealing with improving support for the iPod Classic.
It'll come soon, but like most everything here, it'll be available
when it's ready.

I'm not sure if simply upgrading libgpod on your machine will give
Amarok the ability to interact with the newer iPods, or if work needs
to be done on the Amarok code to support them.  I suspect the former,
though.
